Janice's Lovely Lemon Cheesecake

 

Makes 2 cakes
(one for company and one for later - when they are all gone... or so I have been told by a very reliable source (George) who I'm sure knows what he's talking about.
Hey, wait - there was only one cheesecake at the reunion...)

 

 

Ingredients:

 

2 graham cracker crusts 1 package of Jell-O brand Lemon Flavor
2/3 cup of boiling water      1 cup 1% low fat cottage cheese
8 oz. cream cheese 2 cups thawed Cool Whip Lite

 

Directions:  

 

Completely dissolve gelatin in boiling water; pour into blender.  Add cottage cheese and cream cheese.  Cover and blend at medium speed, scraping down sides occasionally, about 2 minutes or until mixture is completely smooth.  Pour in large bowl.  Gently stir in whipped topping.  Pour into prepared pan; smooth top.  Chill until set, about 4 hours.
